We visited a crawfish farm in Welsh, Louisiana, where we followed the process from harvesting crawfish in flooded rice fields to weighing, sorting, and shipping them around the country. We sampled Louisiana specialties for lunch and learned about the demanding work and history behind the operation. Later, we joined a crawfish boil, tried crawfish with local guidance, and learned how to peel and eat them like a Louisiana local.
