We travel from Damascus to a Syrian family’s home on the outskirts of the city, stopping at local markets to buy ingredients for kibbeh and other dishes. We help prepare several kinds of kibbeh, including grilled, baked, boiled, and raw versions, before sharing a large meal with the family. We spend about five hours enjoying Syrian food, arak, and the family’s warm hospitality, and learn about the tradition of offering tea, coffee, and food to travelers.
