We drove into the Zagros Mountains and visited the village of Khoye, where we explored traditional stone-and-wood homes and watched local women make handmade carpets, blankets, and other crafts. We then trekked for several hours through the mountains, crossing a cold river and sampling wild plants, to reach the remote guardians of wild celery. We stayed in their mountain hut, learned about their sustainable way of life, and shared a mushroom omelette made with freshly picked ingredients.
