The Bouncing Noodle Master of Hong Kong

We visited Kwan Kee Bamboo Noodle Shop in Hong Kong to watch Marco make traditional bouncing noodles by hopping on a bamboo pole over the dough for several hours. We learned that this centuries-old technique makes the noodles more elastic, but the tradition is nearly disappearing because of the intense manual labor. We later tried the noodles with help from a local friend and found them delicious.
