This Ice Cream Doesn't Melt (Find Out Why)

We visited Kahramanmaraş, the birthplace of Turkish ice cream, and explored its old markets, castle, mosque, and traditional ice cream shops. We learned that salep, wild orchid tubers, and milk from goats fed on mountain herbs give the ice cream its distinctive chewy texture and keep it from melting. We also watched vendors play tricks with customers and sampled the city's famous dondurma.
